We were delighted to be offered 1 tonne of Riesling fruit from the biodynamic Brackenwood Vineyard in Hope Forrest in the Adelaide Hills. The vines grow on a variety of undulating slopes, 360-400 metres above sea level in soils that are ironstone and quartz over clay subsoil. When hand picked the fruit had about 25% Botrytis and was left on skins for about a week. The Fruit was then pressed to stainless where wild fermentation took place. After 8 weeks the juice was transferred to a selection of wood for 9-month elevage. Bottled unfiltered and un-fined with 25 parts of SO2 added in the month leading up to bottling.
