Fruit: Rondo grapes 50%, Cox Orange apples 25%, Alexander Lukas pears 25%
Origin: Grapes from Hällåkra in Skåne, Waste apples and pears from growers in Skåne. Pre-maceration: 24 hours
Yeast: Spontaneous fermentation
Residual sugar: 5g/l
Info: The biggest fermenting experience we ́ve had so far. One day maceration before pressing the grapes. Fermenting separate all the way and left for a couple of months before we blended it with first apples to re-ferment and then after another couple of weeks with pears with high VA. Almost still but a lot of energy and freshness.
