Hand picked on a sunny day in late March, the Chenin was wholebunch pressed to tank and allowed to settle on gross lees overnight. Indigenous yeasts fermented the juice, then the wine was aged partly in tank, partly in old French oak hogsheads. Oxidatively handled, unfined and unfiltered, this is a cloudy wine. No additions were made apart from a minimal amount of sulphur prior to bottling.
