Vineyard - Galli Estate. For the most part, minimal intervention and sustainable.
Winemaking - Bunches were destemmed, keeping the berries as intact as possible, then soaked for 45 days on skins with wild yeast completing the fermentation. Basket pressed to neutral French oak and matured for 9 months. Unfiltered, unfined. No adds apart from minimal sulphur.
