Hand-picked in mid April, Cab Franc whole bunches (with a tiny amount of Riesling) were sealed up and allowed to undergo carbonic maceration for two weeks, before a gentle stomping to release some juice. Indigenous yeasts completed fermentation. Juice poured over by hand once a day before being basket-pressed to barrel for winter. No additions, fining or filtering.
