Bunches were destemmed, leaving the berries as intact as possible. Wild yeasts were allowed to complete the fermentation, with the berries being pushed under the juice by hand once or twice a day, before being basket pressed to barrel. There have been no additions to this wine apart from minimal sulphur, and there has been no fining or filtration. This wine was still fairly active when bottled, and while it’s not exactly a Pet Nat, it’s quite spritzy.
