Single vineyard Porongurup Riesling grown by the fabulous Rosie & Ian at Zarephath. A few hours’ skin contact for flavour, then pressed for a quick overnight settle with no enzyme or sulphur. Cloudy juice then racked with all but the heaviest solids to a ceramic eggs and older French oak barrels for 100% natural fermentation, then left on lees for 6 months before blending and bottling.
Flint, malted barley, hay & honeycomb over a base of lime skin and honeysuckle. Has powdery texture mid palate and a cheesy/leesy finish.
