This wine was made with low yielding, hand picked Chardonnay from the cool Myola vineyard at Coghills Creek on the northern edge of Ballarat, picked in April 2016. It was whole bunch pressed and fermented in one to three year old French oak barrels with indigenous yeast. After fermentation it was racked off its solids and returned to French oak barrels – 15% new with the rest one to three years old – where it slowly went through indigenous malolactic fermentation on lees until December 2015,when it was bottled without fining.
