"Dark Eyes" is the latest release sour beer from Future Mountain. Dark eyes is an amber sour that has been aged in oak barrels then finished in blackberries. The fruited sour beers have been blended from carefully selected 6-9 month old amber sour beer that has been aged in Future Mountain puncheons (larger barrel). After tasting and blending the beer is transferred into recoopered barriques (smaller barrels) and aged on whole fruit Blackberries from the Yarra Valley.
