HAY Cherry is a variety of HAY brewed with local cherries. It has a vinous balance between Stevnsberg cherries and wild fermentation, elegant and not too sweet. While it’s less sweet than HAY Apple, they’re both very suited for aperitifs.
Striving to brew only using local and if possible organic produce, this brewery near Roskilde where the first vikings sailed out from is setting the goalposts. We have imported some summery stuff, their new line of "terroir" using only superlocal produce, which is why some of their beers are brewed without hops and instead incorporating hay to ferment beers, some wild-fermented with fruits, which adds a whole different layer of flavours.
