This blend consists of 65% Sangiovese and 35% Grenache. The Sangoivese was sourced from 12 year old vines on the Vivian Vineyard which is located along the river in Leasingham, while the Grenache was sourced from 80 year old bush vines from the Gullyview Vineyard. Both parcels were handpicked, the Grenache coming off first on the 14th of February and the Sangiovese one week later on the 21st of February. In the winery the two parcels were kept separate. The fruit was mainly destemmed except for 20% whole bunches which was kept at the bottom of the ferments. The fermentation process took place using indigenous yeasts and lasted around one week, all up the wine was on skins for 2 weeks. The ferments were lightly hand plunged twice daily. Both batches were basket pressed to tank where the wine was left to settle off lees before being transferred to old French oak where it remained for 5 months. At this point the Sangiovese and Grenache were racked from barrel, blended with a small addition of sulphur and left to sit in tank for a month. The wine was then bottled with no fining or filtration.
