Tim Sproal at Minim showing a dab hand at making a complex Chardonnay. Sourced from the 40 year-old, organically-run Faraday vineyard near Mt Alexander.
It's got richness and a touch of oxidation on the peachy nose but moving into the palate it tightens up like the proverbial camel in a sandstorm, with a lean, saline crunch.
It's early-picked fruit, fermented wild, some lees-stirring involved, and it is an absolutely delicious wine.
